1 bunch broccoli, cut into pieces |
3 -4 carrots, peeled and sliced |
1 small cauliflower, cut into florets |
1 lb fresh mushrooms, sliced thin |
3 -4 green onions, thinly sliced |
1/2 cup sugar |
1/3 cup red wine vinegar |
1 teaspoon salt |
1 -2 teaspoon celery seed |
1 teaspoon paprika |
1 teaspoon onion powder or 1/4 cup minced onion |
1 cup vegetable oil |
Directions:
1. Steam vegetables for 3 to 4 minutes. 2. Drain and rinse under cold water to stop cooking. 3. Drain well. 4. Place in a large bowl along with mushrooms and green onions. 5. Whisk together dressing ingredients. 6. Pour over vegetables. 7. Toss well. 8. Chill for 6 to 8 hours, stirring occasionally. |
