These can be used has an appetizer or served with a salad for a lunch or light meal.. I may try it with some peas on the side also Ingredients:
2 tsp oil |
1 cup chopped broccoli |
1 cup chopped white mushrooms ( chopped pretty small) |
1/4 cup sliced green onion |
2 large eggs |
1/4 cup sour cream |
1/4 cup grated cheese |
4 slices of bacon, cooked, crisp and crumbled |
12 frozen tart shells, thawed |
Directions:
1. preheat oven to 350 2. Broccoli Filling: 3. heat cooking oil in a medium frying pan on medium high heat. 4. Add the broccoli, mushrooms and green onions. Cook for 5 to 10 minutes, stirring occasionally, until mushrroms start to brown 5. cool slighty 6. beat together the eggs, sour cream and cheese with a wire whisk in a medium bowl. 7. Add bacon and broccoli filling to the egg mixture stirring well 8. Arrange tart shells on a ungreased baking pan. 9. spoon 2 tablespoons of filling into each tart shell. 10. Bake on bottom rack for 30 to 35 minutes or until set |
