I first tasted this cornbread at a friend's house. I've been hooked ever since. Very easy to make. Ingredients:
1 10oz box frozen chopped broccoli-thawed and drained |
1 stick butter-melted |
1 8oz container cottage cheese |
1/2 cup chopped onion |
1 cup sharp cheddar cheese |
1/2 teaspoon salt |
4 eggs-beaten |
1 box jiffy cornbread mix |
Directions:
1. Preheat oven to 400 degrees. In a medium mixing bowl,combine first 7 ingredients. Mix well. 2. Add cornbread mix. Stir until just combined. 3. Pour batter into a greased 8x8 pan. 4. Bake for 20-25 minutes or until golden brown. 5. Cut into squares and serve hot with additional butter. 6. Suggestion:Sprinkle additional cheese on top during the last 5 minutes of baking. |
