Yummy corn bread treat my whole family loves. I found this in the What Can I Bring Cookbook . Ingredients:
8 tbs butter , melted |
1 pkg (10 oz) frozen chopped broccoli, thawed & drained |
1/2 cup finely chopped onion |
4 large eggs, beaten slightly |
3/4 cup small curd cottage cheese |
1/2 tsp salt |
1 pkg (8.5 oz) corn muffin mix |
Directions:
1. Pre-heat oven to 400 degrees 2. Lightly spray 13x9 glass bakind dish with veggie oil spray and set to side 3. In large mixing bowl, stir butter, broccoli, onion, eggs, cottage cheese & salt all together. 4. Add corn muffin mix, press out big lumps with a fork 5. Pour batter into prepped baking dish 6. Bake about 25 minutes until corn bread is lightly browned 7. Allow to cool slightly before serving |
