Broccoli Cheese Soup

Love the texture of this soup. You can puree part of it and leave the rest in chunks or puree it all. I've been looking for a good broccoli cheese soup and this fit the bill perfectly!
Ingredients:
1/2 cup onion, chopped
1/4 cup flour
2 cups fat free chicken broth
1 1/2 lbs broccoli
1 cup carrot
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon pam cooking spray
2 cups milk
1/4 cup unsalted butter
6 ounces cheddar cheese
Directions:
1. Saute onion in PAM, set aside.
2. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add milk.
3. Add Chicken broth, simmer for 20 minutes.
4. Add broccoli, carrots, onions. Cooker over low heat 20-25 minute (I used the pressure cooker for 10 min.).
5. Add salt and pepper. Puree in blender. Return to heat, add cheese and nutmeg.
