I love soup, especially in the winter and this is one of my favorites. Ingredients:
4 cups chicken broth |
1 cup water |
1 cup half-and-half |
1 cup shredded cheddar cheese |
1/2 cup flour |
1/8 cup grated onion, juice and all |
1/4 teaspoon fresh ground black pepper |
4 cups broccoli florets (cut small) |
1/2 cup shredded cheddar cheese |
2 teaspoons fresh parsley, chopped |
Directions:
1. Combine chicken broth, water, half-and-half, flour, onion and pepper in large saucepan. 2. Whisk to combine. 3. Add cheddar cheese. 4. Whisk again. 5. Turn heat to high and bring to a boil. 6. Stir occasionally. 7. Turn heat to low. 8. Add broccoli and simmer for 15 minutes Check broccoli for doneness. 9. Cook additional 5 to 10 minutes if necessary. 10. It should be bright green and tender, not olive green and mushy. 11. For each bowl, top with one tbs cheddar cheese and 1/2 tsp parsley. |
