First time I ever made this soup. Turned out to be delicious! The measurements might not be exact because I did not measure the ingredients, but they are an estimate. Ingredients:
2 bunches broccoli, cut up into small pieces |
1 medium onion, chopped |
3 tablespoons margarine, for sauteing |
3 1/2 cups chicken broth |
2/3 cup flour |
2 1/2 cups milk or 2 1/2 cups cream |
2 teaspoons paprika (or more) |
2 teaspoons salt (or more) |
2 cups cheddar cheese |
Directions:
1. In a medium saucepan, saute the broccoli and onions until tender. 2. Add the chicken broth. 3. In seperate bowl, mix together the milk and flour. 4. Bring the broth mixture to a boil and the slowly add the milk mixture, until smooth. 5. Add spices to desired taste. 6. Bring to a boil and let it thicken (gently). 7. Add the cheese. Allow cheese to melt. 8. Serve and enjoy! |
