Broccoli Cheese Chicken Bake |

I love this recipe. Its not exactly the healthiest, but I think the extra vegetables make it a little better. My fiance and my roommate (and just about everyone who tastes it) loves it. Enjoy! Ingredients:
3 cups of chopped broccoli |
1 cup of diced carrot |
1 cup of diced celery |
1/2 cup diced onion |
2 minced garlic cloves |
2 tablespoons margarine |
3 cups sharp cheddar cheese |
1 (11 ounce) can campbell's healthy request cream of chicken soup |
1 cup milk |
2 cups finely chopped chicken |
1 1/2 cups dry rice |
3 cups chicken broth |
1/2 tablespoon cajun seasoning |
2 tablespoons breadcrumbs |
Directions:
1. Cook the rice according to directions in the chicken broth and preheat the oven to 375°F. 2. Meanwhile, saute broccoli, carrots, celery. onions, garlic and cajun seasoning in margarine for 10 minutes. 3. In a large bowl, combine the sauteed mixture with the cooked rice, the cheese, the of cream-of-chicken, the milk and the raw chicken. 4. Pour into a 13x9x2 glass pan, sprinkle the breadcrumbs over the top, and bake in the oven until the chicken is done. |
