Hereâs a handy and versatile side thatâs creamy, colorful and bursting with flavor and nutrition. Pair it with almost any entree for a terrific meal. âDeborah Patrauchuk, Sicamous, British Columbia Ingredients:
1-3/4 cups fresh broccoli florets |
1 tablespoon cornstarch |
1/8 teaspoon salt |
dash pepper |
2/3 cup fat-free milk |
1 medium onion, chopped |
1/2 cup shredded cheddar cheese |
2 tablespoons grated parmesan cheese |
Directions:
1. Place 1 in. of water and broccoli in a small saucepan; bring to a boil. Reduce heat; cover and simmer for 3-5 minutes or until crisp-tender. 2. Meanwhile, in a small saucepan, combine the cornstarch, salt, pepper and milk until smooth. Bring to a boil; cook and stir for 1 minute or until thickened. Stir in onion and cheddar cheese until cheese is melted. Drain broccoli; stir into cheese sauce. 3. Transfer to a 1-qt. baking dish coated with cooking spray. Sprinkle with Parmesan cheese. Cover and bake at 350° for 25-30 minutes or until vegetables are tender. Yield: 4 servings. |
