Broccoli Cheddar Puffy Pizza |

This is an impressive little dish that you can serve at a brunch, as an appetizer, or as a light lunch or supper. Ingredients:
8 ounces puff pastry (1 sheet) |
5 ounces frozen chopped broccoli, thawed |
1 clove garlic, sliced paper thin |
2 tablespoons extra virgin olive oil |
2 ounces sharp cheddar cheese, shredded |
salt and pepper, to taste |
Directions:
1. Lay out the sheet of puff pastry on a cool, greased baking sheet. 2. Brush dough with the olive oil. 3. Lay the garlic slices out over the dough, in whatever pattern suits you. 4. Top with the broccoli, leave about 1/2 inch of dough on each side. 5. Season the broccoli with salt and pepper. 6. Sprinkle the cheddar cheese over the broccoli. 7. Bake in a 475 degree oven for 10-15 minutes, until pastry puffs up nicely and gets crisp. 8. Serve. |
