Great side dish or meatless main dish. Quick to fix and great to throw in the oven with whatever you have roasting. Ingredients:
6 cups broccoli florets, thawed and chopped |
1/2 cup onion, finely chopped |
1 lb ricotta cheese |
1 cup shredded sharp cheddar cheese |
3 eggs, slightly beaten |
1/2 teaspoon salt |
1/4 teaspoon ground black pepper |
Directions:
1. Preheat oven to 350 degrees. 2. In a large bowl, combine all ingredients; mixing until well blended. 3. Spoon into a 10-inch quiche plate or deep dish pie plate. 4. Bake 60 to 65 minutes or until knife inserted near center comes out clean. |
