High protein, low fat and tasty Ingredients:
2 cups broccoli, steamed and chopped |
1/2 small red onion |
1/4 tsp. salt |
1/8 tsp. pepper |
1 cup eggbeaters |
1 cup eggbeaters, egg whites |
2 tbsp. water |
1/2 cup shredded cheddar, extra sharp |
Directions:
1. Steam broccoli for 5 minutes; chop. 2. Saute 1/2 small, red onion in 2 tsp. olive oil. Add broccoli. 3. Beat egg mixture and add to pan, coating veggies evenly. 4. Cook for 8 minutes until mostly set but a little soft in middle. Sprinkle with cheese. 5. Broil for 2 minutes. |
