Cheddar and broccoli is always a good combination. Now in a one pot meal; almost like a frittata - mm-mm good! Ingredients:
8 cups chopped fresh broccoli |
1 cup finely chopped onion |
3/4 cup butter or margarine |
12 eggs |
2 cups whipping cream |
2 cups shredded cheddar cheese, divided |
2 teaspoons salt |
1 teaspoon pepper |
Directions:
1. In a skillet over medium heat, saute broccoli and onion in butter until crisp-tender, about 5 minutes; set aside. 2. In a bowl, beat eggs. Add cream and 1-3/4 cups of cheese; mix well. Stir in the broccoli mixture, salt and pepper. 3. Pour into a greased 3-qt. baking dish; set in a large pan filled with 1 in. of hot water. 4. Bake, uncovered, at 350 degrees F for 45-50 minutes or until a knife inserted near the center comes out clean. 5. Sprinkle with remaining cheese. Let stand 10 minutes before serving. 6.
