Broccoli Cauliflower Salad |

This recipe is from my cousin. She brought this over for our Memorial Day barbeque, and it was really good. The acid from the vinegar slightly cooks the broccoli and cauliflower so it has a bit of give to it. Ingredients:
1 head cauliflower |
1 head broccoli |
1 lb. bacon, fried and crumbled |
1 cup shredded cheddar cheese |
1/3 c. sugar |
1 c. mayonnaise |
1/4 c. vinegar |
Directions:
1. Cook bacon over medium-high heat until lightly browned - crumble bacon. Chop the florets only from the cauliflower and broccoli into small bite-size pieces. 2. In a medium sized salad bowl, lmix the broccoli, cauliflower, bacon and cheese. 3. Prepare the dressing by whisking together the mayonnaise, sugar and vinegar. Drizzle dressing over top of salad and let salad mixture stand refrigerated for a couple of hours or overnight before serving. 4. Salt and pepper to taste, if needed/desired. |
