Ingredients:
1/2 cup light mayonnaise |
1 tablespoon sugar |
2 tablespoons rice wine vinegar |
1 teaspoon salt |
1/2 teaspoon ground ginger |
1 (12-ounce) package pre-washed broccoli and cauliflower florets blend, coarsely chopped |
1/2 (10-ounce) package shredded carrots |
1/4 cup roasted peanuts, chopped |
Directions:
1. Whisk together first 5 ingredients in a large bowl. Add broccoli mixture and carrots, tossing to coat. Sprinkle evenly with nuts. |
