Broccoli, Cauliflower And Bacon Salad |

I found the basic recipe on another site and tweeked it to my own liking. Went over really well at a gathering over the weekend. Enjoy Ingredients:
4 cups broccoli florets |
4 cups cauliflower florets |
1 cup dried cranberries |
2 red apples, diced (i used fuji apples) |
2 granny smith apples, diced |
3 green onions, thinly sliced |
1 pound maple flavored bacon, cooked crisp and crumbled |
4 tablespoons lemon juice, divided |
1 cup mayonnaise (can use light mayo if desired) |
3 tablespoons maple syrup |
Directions:
1. Blanch broccoli and cauliflower in boiling salted water for 2 minutes. Plunge into a boil of ice water to stop cooking process. (You can skip this step if you want, but I find it takes some of the bitterness out of the vegetables.) 2. Drain vegetables and place in large bowl. Add 1 tablespoon lemon juice to diced apple to prevent browning. Add apples, cranberries, green onion and bacon and toss to combine. 3. Combine mayonnaise, remaining 3 tablespoons lemon juice and maple syrup until smooth. Pour over salad. 4. Gently stir. Cover and chill at least one hour. |
