My husband and Dad go gaga over this dish so it's a regular side at many get togethers. It's also been a very successful way to get children to eat a little green broccoli. Ingredients:
1 large package frozen chopped broccoli (i think it's a 1 pound bag, but it really doesn't matter if it's over a pound) |
1 stick butter |
1 medium onion, chopped |
1 cup instant rice, cooked |
1 8 oz jar cheez whiz |
1 can cream of mushroom soup concentrate (like campbell's) |
Directions:
1. Preheat oven to 350. 2. Cook rice and set aside. 3. Saute onions in butter until translucent. 4. Add frozen broccoli and cook until tender. 5. Spray or butter a 9 X 12 casserole pan. 6. Add cheese and soup concentrate to pan and stir together. 7. Add broccoli onion combo and rice and stir until combined. 8. Bake for 20-30 minutes until bubbly. 9. Let sit 10 minutes before serving. 10. This dish is even excellent as a left over -reheat in microwave. |
