Here's a somewhat lightened-up version of a favorite. Since I prefer fresh veggies, I usually make this with fresh broccoli (1 large bunch-cut in small pieces and blanched). I often add a dash of garlic powder or vegetable seasoning to the mix for added flavour. NOTE: Prep time does not include thawing time for frozen broccoli or blanching time for fresh. Ingredients:
20 ounces frozen broccoli, thawed & drained |
1 egg |
2 egg whites, beaten |
3 tablespoons flour |
12 ounces low fat cottage cheese |
6 ounces velveeta reduced fat cheese product, cut in chunks |
Directions:
1. Preheat oven to 350*. Mix ingredients together and pour in a 2 quart greased baking dish (I use cooking spray). Bake for 1 hour, until bubbly. |
