From The McClellanville Coast Seafood cookbook. This recipe is always requested for holidays by my family. Last Christmas, I added lump crabmeat. Ingredients:
2 (10 ounce) packages broccoli, frozen |
2 eggs |
8 tablespoons butter |
1 onion, small |
1 (10 1/2 ounce) can cream of mushroom soup |
1/2 cup mayonnaise |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 cup cheese, grated |
15 ritz crackers, crushed |
1 lb crabmeat (optional) |
Directions:
1. Cook broccoli until tender, drain. Combine eggs, butter, onion, soup, mayonnaise, salt, and pepper in a large casserole dish. Top with cheese and cracker crumbs and bake about 40 minutes at 350 degrees. |
