I found this recipe in a cookbook given to me for Christmas called Irish Cooking . The casserole is really simple to make, and it has an almost quiche-like texture to it. The original recipe called for regular cottage cheese, but we actually had FAT FREE on hand. I don't think it took away from the flavor of the dish at all. This dish might also be nice served at brunch or breakfast. Ingredients:
2 (10 ounce) packages frozen chopped broccoli, thawed and drained |
1 (16 ounce) container fat-free cottage cheese |
1 1/2 cups cheddar cheese, grated |
4 eggs, lightly beaten |
4 tablespoons butter, melted |
salt and black pepper, to taste |
Directions:
1. Preheat oven to 350°. 2. Mix thawed broccoli and remaining ingredients in a large bowl. 3. Pour into a 2-quart casserole dish. 4. Bake 40 minutes or until eggs are set and casserole is heated through. |
