Adapted from Good Housekeeping's Book of Vegetables. I've reduced the amount of oil and changed the way the garlic is used. Ingredients:
1 1/2 lbs broccoli, trimmed and coarsely chopped |
2 tablespoons oil |
1 garlic clove, minced |
1/2 cup finely chopped onion |
1 -2 dried cayenne pepper |
2 tablespoons water |
salt |
Directions:
1. Heat oil in large skillet. 2. Add garlic, onion, and pepper(s). 3. Cook until onion is tender, stirring occasionally. 4. Remove pepper(s) and discard. 5. Add broccoli, water and salt. 6. Cover and simmer until tender-crisp, 12-15 minutes. |
