1 10-oz. pkg frozen chopped broccoli (thawed and drained well) |
1 lg. onion – chopped |
6 oz. cottage cheese |
1/2 c. melted margarine |
4 eggs – beaten |
1 tsp. salt |
1 package martha white’s mexican cornbread mix |
Directions:
1. Directions: 2. Mix chopped broccoli, onion, cottage cheese, margarine, eggs and salt. Add corn muffin mix and blend thoroughly. Pour into a greased 9 x 13 in. casserole dish. Bake at 400 degrees for 20 to 25 min. or until mixture tests done. Cut into squares and serve hot. |
