Broccoli Apple And Bacon Salad |

This came from a Christmas magazine from a couple of years ago but it is an all-year salad for our family. Ingredients:
2 cups coarsely chopped fresh broccoli florets |
1 small fresh cauliflower chopped into cauliflowerets |
1/2 cup dried cranberries |
1 medium red apple, chopped |
1 medium granny smith apple, chopped |
2 tablespoons lemon juice |
1/2 cup light mayonnaise |
2 tablespoons maple syrup |
1 pound sliced maple-flavored bacon, cooked and crumbled |
1/2 cup sunflower kernels |
Directions:
1. In a large bowl, combine the broccoli, cauliflower, cranberries and apples. 2. In a large measuring cup, whisk the mayonnaise, syrup and lemon juice. Stir into broccoli mixture. Cover and refrigerate for at least 1 hour. 3. • Just before serving, stir in bacon and sunflower kernels. |
