Broccoli and Pancetta Saute |

This is a delicious way to enjoy fresh broccoli. Ingredients:
1 1/2 lbs fresh broccoli, trimmed and cut into 4-inch spears |
3 tablespoons extra virgin olive oil |
1 ounce pancetta, diced |
4 garlic cloves, quartered |
1 pinch hot pepper flakes |
Directions:
1. In a large skillet, heat the oil over medium-low heat. 2. Cook the pancetta, garlic and hot pepper flakes, stirring occasionally, until the garlic is golden and the pancetta is crisp, about 5 minutes. 3. Stir in the broccoli and 1/4 cup water. 4. Cover and cook until tender-crisp, about 8 minutes. |
