I still need to refine this, and suggestions would be greatly appreciated! I'm trying to make a good broccoli soup for on a diet. The cheese kinda melts all together, but it still tastes good. I couldn't find low-fat cheese at the store. Ingredients:
2 tablespoons extra virgin olive oil |
1/2 medium onion |
1 tablespoon minced garlic |
8 cups fat free chicken broth |
1 large head broccoli |
1/4 cup margarine |
8 ounces cheddar cheese |
1 cup fat-free half-and-half |
Directions:
1. Chop onion in small pieces. 2. Chop broccoli into small pieces and set aside. 3. Cook onion and garlic in olive oil in 2 quart pot until onion is clear. 4. Add chicken broth and simmer 10 minutes. 5. Add broccoli pieces and margarine. Cover and simmer for 1 hour. 6. Grate cheese and add to soup. Stir well. 7. Turn off heat and add half and half. 8. Serve warm. |
