Broccoli and Cheese Casserole, Low Fat |

Low fat casserole with broccoli and a mixture of mushrooms (crimini, white button) and low fat butter. Low fat and low sodium mushroom is used in addition to low fat shredded cheese of any choice. Ingredients:
5 cups broccoli |
1 cup low fat cheese (cheddar or mozzarella) |
1/2 cup low fat milk (1%) |
8 oz mushrooms (crimini and white button) |
3 tablespoons smart balance butter |
10 oz mushroom soup |
1 cup shallots (onions ) |
15 oz water chestnuts |
1/2 cup of celery |
Directions:
1. Steam 5 cups of broccoli for 5 mins until slightly tender. Take 3 tablespoons of Smart Balance Light Butter and sautee onions, mushrooms, garlic, celery in a pan and sweat out veggies for 7 to 10 minutes. Salt and pepper the mixture to taste. 2. Melt cheese, milk and soup in a microwave until mixture is smooth - about 5 to 10 minutes. Stir mixture into a large bowl and add the vegetables to mixture. 3. Coat everything evenly and then take a casserole dish or large 9x12 pan and spray coat with Pam or some other vegetable baking spray. Add mixture to the pan. Bake in a 350 degree oven for 1 hour. Make sure to sprinkle half cup of low fat cheese on top of mixture prior to setting it in the oven. |
