Broccoli And Chedder Soup |

This is a light summery soup. You could also make this and freeze it for eating later. Ingredients:
1 small head of broccoli |
2 small onions - chopped |
2 cloves garlic - chopped roughly |
2 litres chicken or veg stock |
1 teaspoon red chilli - chopped roughly |
2 cups grated cheese |
salt |
black pepper |
paprika |
greek yogurt (optional) |
Directions:
1. In a medium sized pot 2. Sauté the garlic, red chilli and onion until beginning to brown in a small amount of oil. 3. Add broccoli and continue to sauté until cooked through and just starting to go soft. 4. Add stock and bring to a boil. 5. Add salt, pepper and paprika to taste 6. Once boiling add cheese 7. Once cheese is all melted, remove from heat. 8. Ladle into a blender 9. Blend on medium speed until smooth in texture 10. Pour into bowls 11. If you want a slightly creamier taste, add a dollop of greek yogurt into the bowls before serving. |
