Broccoli and Cavatelli (Italian) |

I love oil and garlic pasta. Add the healthy vegetables for a well rounded meal! This is my kind of vegetarian. Ingredients:
1/2 cup olive oil |
4 -6 garlic cloves, thinly sliced |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
8 ounces vegetable broth or 8 ounces chicken broth |
2 cups broccoli florets |
3/4 lb cavatelli |
parmesan cheese, grated |
Directions:
1. You may substitute any shape macaroni for cavatelli. 2. Lightly brown garlic in oil, add salt and pepper. Cool oil slightly and add chicken broth. Reheat. 3. Meanwhile, cut broccoli in small pieces. Parboil until just tender. Do not overcook. 4. Cook macaroni and drain. Mix cooked cavatelli and broccoli with olive oil mixture. 5. Garnish with Parmesan cheese and serve. |
