Broccoli and Cauliflower Casserole |

Great way for kids to eat veggies. It tastes a lot like Macaroni & Cheese, minus the pasta. Soooo good and cheesy. Ingredients:
1/2 cup cooked white rice |
3 cups water |
10 ounces broccoli florets |
10 ounces cauliflower florets |
1/2 cup butter |
1 small onion, chopped |
1 lb processed cheese, cubed |
10 3/4 ounces cream of chicken soup |
1/2 cup dry white wine |
5 3/8 ounces milk |
1 1/2 cups crushed ritz crackers |
Directions:
1. Preheat oven to 350 deg (F). Break up rice in bag. 2. Simmer broccoli and cauliflower florets in water for 10 minutes, or until crunchy. Drain. 3. In a large saucepan, melt butter and saute onion, until tender. Stir cauliflower, broccoli and rice into the saucepan. 4. Slowly stir in wine and simmer for 2 minutes on medium heat. 5. Stir in the cheese, chicken soup and milk. 6. Transfer the entire mixture to a 9 x13 baking dish and sprinkle the crushed crakers on top. 7. Bake 30 minutes. |
