Broccoli and Cauliflower Casserole |

Great for a party or potluck! Ingredients:
3 cups broccoli florets |
3 cups cauliflower, chopped |
2 eggs |
1/2 cup butter, melted |
1/2 cup mayonnaise |
1 medium onion, chopped |
1 (10 ounce) can cream of mushroom soup |
1 cup cheddar cheese, grated |
2 cups seasoned croutons |
Directions:
1. Cook vegetables in separate pots in boiling, salted water for 5 minutes. Drain. 2. Place evenly in buttered 11 x 7 baking dish or casserole. 3. Beat eggs; combine with mayo, onion, soup, and 1/2 cup cheese. Pour evenly over vegetables. 4. Sprinkle remaining cheese over sauce. 5. Pour melted butter over entire casserole. 6. Distribute crushed croutons over melted butter,. 7. Bake at 350 for 35-40 minutes. |
