BROCCOLI AND CARROT SALAD WITH CHIVE VINAIGRETTE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Moody Estate in Mesquite, Texas in 1990. Ingredients:
1 pound fresh broccoli cut up |
2 carrots sliced |
1/4 cup vegetable oil |
2 tablespoons wine vinegar |
1 tablespoon chopped chives |
1 tablespoon chopped fresh parsley |
1 clove garlic minced |
1/2 teaspoon paprika |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Steam broccoli and carrots until crisp tender then allow to cool. 2. Whisk or beat together the remaining ingredients. 3. Combine and chill then toss and serve cold. |
