This broccoli soup is served with toasted garlic bread and parmesan cheese in it. Yummy! Ingredients:
1 1/2 lb. broccoli, chopped |
7 1/2 cups chicken or vegetable stock |
1 tbsp. lemon juice |
sal and pepper |
6 slices white french bread |
1 large garlic clove, cut in half |
grated parmesan cheese |
Directions:
1. Bring the stock to a boil in a large cauldron. Add the broccoli and simmer until soft, about 10 minutes. 2. Puree about half of the soup and mix into the rest of the soup. Season with salt, pepper and lemon juice. 3. Reheat the soup. Toast the bread, rub with garlic and cut into quarters. Place 3 or 4 pieces of toast in the bottom of each soup bowl. Ladle the soup over the bread and sprinkle with Parmesan cheese and freshly ground pepper. |
