Broad Beans With Bacon and Sausage |

Adapted from Portugese cooking by Carol Robertson Ingredients:
1 link chorizo sausage, chopped |
1/4 lb bacon, chopped |
1 medium onion, finely chopped |
2 tablespoons olive oil, if needed |
1/2 teaspoon cumin |
1 lb lima beans |
1/4 cup parsley, finely chopped |
1/4 cup cilantro, finely chopped |
1/2 cup chicken broth |
salt and pepper, to taste |
Directions:
1. Fry bacon and chorizo for 5 minutes. 2. Add onion and fry 10 minutes. 3. Add oil - if needed- then add remaining ingredients. 4. Bring to a boil,reduce heat,and simmer 15 minutes. 5. Serve. |
