Broad Bean and Rocket Salad With Bean Butter |

2 (400 g) butter beans (drained and rinsed) |
4 teaspoons creamed horseradish |
5 tablespoons olive oil |
1 lime (zest and juice) |
175 g broad beans (fresh or frozen cooked and peeled) |
2 tablespoons walnut oil |
70 g rocket |
lemon wedge |
Directions:
1. Whizz butter beans with horseradish olive oil lime zest and juice and 3 tablespoons warm water until smooth and creamy. 2. Toss broad beans in walnut oil, add rocket and toss again. 3. Pile the butter bean mix into a shallow serving dish and put the bean and rockets salad in large bowl, season well with black pepper and serve with lemon wedges and bread sticks. |
