What to do when you need scones *now* and all your butter is frozen.. see recipe below! From an International bread baking group. discusssing making scones without butter in the recipe. I bet one can sub lemon-lime or 7 up soda for the lemonade in the recipe too. Ingredients:
1 cup cream (single or double) |
in a complete emergency, sub 1/2 cup oil and 1/2 cup lemonade |
1 cup fizzy lemonade |
3 1/2 cups self-raising flour |
or 3 1/2 cups flour mixed w ith 5 teaspoons baking powder |
1/4 teaspoon salt |
Directions:
1. Method: 2. Heat oven to 200C 3. Mix all ingredients to make a soft dough. 4. Pat out to 2 cm thick (almost an inch) on a floured surface. 5. Cut out using a floured scone cutter. 6. Place on a floured (not greased!) baking sheet. 7. Brush tops of scones with cream/milk if you want a bought look. 8. Bake for 18 - 22 mins until light brown on top and well risen. 9. If your scones don't rise properly, try making the dough a bit 10. thicker. 11. Less than 2cm and they just don't rise. |
