Adapted from a recipe by Nina Hall . Jellied cranberry sauce can be substituted for the whole-berry, but I think the whole-berry makes a much nicer sauce. Note this recipe calls for a fresh beef brisket, not a corned beef brisket Ingredients:
3 lbs fresh first-cut beef brisket |
1/2 teaspoon salt |
1/4 teaspoon ground black pepper |
1 (16 ounce) can whole berry cranberry sauce |
1 (8 ounce) can tomato sauce |
1/2 cup chopped onion |
1 tablespoon prepared mustard |
Directions:
1. Rub brisket with salt and pepper; place in a slow cooker. 2. Combine the cranberry sauce, tomato sauce, onion and mustard; pour over brisket. 3. Cover and cook on low for 8-10 hours or until meat is tender. 4. Remove brisket; thinly slice across the grain. 5. Skim fat from cooking juices; serve with brisket. (Reduce sauce in a saucepan if too thin.). |
