Brinjal With Scrambled Egg |

Bored with brinjal. Try this new recipe and i bet you wont stop loving brinjal!!! Ingredients:
brinjal 2 medium sized |
garlic 5 flakes |
ginger 1inch |
onion 1 large |
potato – 3 medium sized |
chilli – 2 |
cumin seed 1tsp |
black pepper powder- 1/2 tsp |
salt 2tsp |
turmeric powder 1tsp |
egg- 2 nos |
tomato – 1 small and ripe |
coriander leaves 1 bunch |
oil to fry 2 tbsp |
Directions:
1. 1.Roast brinjals 2. 2.De skin the brinjal and mesh it. 3. 3.Boil the potatoes and de skin it mesh it properly without leaving any lump in it. 4. 4.Cut onions in to fine slices 5. 5.Make fine ginger juliennes 6. 6.Crush garlic roughly 7. 7.Add mashed potatoes in to the mashed brinjal 8. 8.Add turmeric powder and salt and mix it well. 9. 9.Heat oil in pan and when its warm add cumin seeds and let it splutter. 10. 10.Fry the onions and when it turns golden add the ginger juliennes and chopped garlic, chilli in to it. Fry till it changes colour. 11. 11.Add the mashed potato+ brinjal in to it and fry for some time when its starts to leave oil add the cumin powder. 12. 12.Beat the egg and add a pinch of salt. 13. 13.Spread the fried stuff towards the margin of the pan so as to make a ring and oil gets accumulated in the middle. 14. 14.Add the egg and mix thoroughly and cook for 3 mins. Add black pepper powder. 15. 15.Turn off the gas and garnish with fresh coriander leaves and ripe tomato pieces. 16. 16.Enjoy with paranthas or rice . |
