What better way to celebrate than with a souper party. Each guest you invite is asked to bring a soup vegetable or cooked meat to add to the soup. (Green beans, carriots, mushrooms, meatballs, cooked chicken, etc. Read more .) Make it interesting...ask them to bring an ingredients that starts with the first letter of their first or last name. Serve a large green salad, crusty bread and simple dessert for an evening of enjoyment. I do this in the Christmas season. Everyone loves it.
Ingredients:
4 cups sweet onion, thinly sliced
2 cloves garlic, minced
3 tablespoons butter or margarine
3 tablespoons all-purpose flour
6 (14 1/2 ounce) cans beef broth
2 cups tomato puree
1 tablespoon red wine vinegar
1 tablespoon worcestershire sauce
1 tablespoon granulated sugar
1/2 teaspoon dried oregano
1/2 teaspoon dried tarragon
1/2 teaspoon ground cumin
salt and ground black pepper to taste
1/2 teaspoon hot pepper sauce

Directions:
1. In large stock pot, saute onion and garlic in butter until softened.
2. Stir in flour and blend well. Cook until bubbly.
3. Add beef broth, tomato puree, vinegar and seasoninings.
4. Bring to a boil.
5. Reduce heat and simmer 40 minutes.
6. (At this point mixture can be chilled overnight. Reheat before proceeding.)
7. Add any vegetables, pasta or rice and simmer 30 minutes.
8. Add any cooked meats and heat through.
9. Serve in bowls.
