Brined Roasted Chicken

Gotta love a good Roasted Chicken.
Ingredients:
8 cups warm water
1/2 cup kosher salt
1/4 cup brown sugar, packed
3 tbls. molasses
1 tbls. whole peppercorns, crushed
1 tbls. whole allspice, crushed
2 tsp. ground ginger
1-4 lb. roasting chicken
4 cups cold water
1 tbls. olive oil
Directions:
1. Combine first 7 ingredients in large pot
2. Bring to boil and cook until salt dissolves
3. Cool to room temperature
4. Remove giblets from chicken
5. Put cold water in resealable 2 gallon plastic bag
6. Add chicken
7. Put into roasting pan
8. Pour brine into bag
9. Turn to coat and refrigerate for 3-4 hours, turning occasionally
10. Preheat oven to 350
11. Discard brine and rinse chicken with water and dry
12. Brush with olive oil
13. Put back into baking pan
14. Bake 75-80 minutes or until 180 degrees
