If you like beets you will love this dip. It is very tasty, very pretty and very tasty. I tasted this at my bosses house about a year ago and fell in love with it instantly. Enjoy Ingredients:
1 pound beets soft cooked peeled and chopped |
4 ounces soft tofu drained |
1 tablespoon apple cider vinegar |
2 tablespoons minced shallots |
1/2 teaspoon dry mustard |
1/2 teaspoon dried thyme |
1/2 teaspoon dried tarragon |
Directions:
1. Puree ingredients in a food processor or blender until smooth. 2. Adjust seasonings adding more vinegar and salt to taste. 3. Serve immediately or refrigerate in tightly sealed container for up to 3 days. |
