This appetizer seems to always make its way to our family get togethers. It's always the first to go! If you don't have access to pignoli nuts, just omit. Alternate Serving suggestion for Pasta Entree: Trim rind from all sides. Read more . Cube Brie. Make tomato mixture. Toss with medium shaped cooked pasta. Ingredients:
1 large wheel brie cheese |
1 cup oil-packed sundried tomatoes, oil reserved |
6 leaves basil |
2-4 cloves garlic |
1/4 cup pignoli (pine) nuts, toasted (optional) |
1 package multigrain crackers for serving |
Directions:
1. Trim rind on Brie from top and sides. Leave rind on bottom. 2. In food processor, pulse garlic 8-10 times. 3. Add tomatoes and basil and process for about 1 minute, until everything is finely chopped. Add oil from tomatoes if mixture seems dry, 1 Tbsp at a time. 4. If using pignolis, add and pulse 8-10 times. 5. On a microwave safe plate, cover top of Brie with tomato mixture. 6. Microwave on High for 20 seconds at a time, until sides are melted and center is soft. |
