Brie With Caramelized Pecans |

Very elegant, very impressive, very cheesy, very creamy and very tasty appetizer. Enjoy Ingredients:
2/3 cup brown sugar |
1/3 cup water |
1/2 cup heavy cream |
4 tablespoons unsalted butter |
1/2 cup spiced pecans |
1 wheel ripe brie cheese top rind cut off evenly |
Directions:
1. Combine brown sugar and water in a heavy bottomed saucepan and bring to a boil. 2. Continue to cook over medium heat until mixture reaches soft ball stage. 3. Let the mixture cool slightly then stir in the cream. 4. Continue to boil another 5 minutes or until the mixture is slightly thickened and glossy. 5. Remove from heat and stir in the butter then fold in pecans. 6. Pour caramel mixture evenly over top of cheese letting a little of it run down the sides. 7. Serve with crackers and apple wedges. |
