Brie With Caramelized Onions |

From Gooseberry Patch Come On Over. Serve with baguette slices. Ingredients:
5 ounces wheel brie cheese |
1 onion, chopped |
2 tablespoons butter |
1/2 cup brown sugar, packed |
1/2 cup dried cranberries |
2 tablespoons balsamic vinegar |
1/4 cup chopped pistachios |
Directions:
1. Place brie in a greased 9 inch pie plate; bake in a 350° oven for 10 minutes. 2. Remove from oven and set aside. 3. In a skillet, saute onion in butter for about 5 minutes or until tender; add in brown sugar, cranberries, and vinegar. 4. Heat until mixture caramelizes and thickens (about 5 minutes), stir occasionally. 5. Pour mixture over brie. 6. Sprinkle with pistachios; serve warm. |
