I wanted fried artichokes and couldn't find a recipe suiting my needs so adapted my own. I used soymilk instead of regular milk because of a milk allergy and it made no difference. Hubby loves this with ranch dressing and parmesan cheese on top! :) I think it tastes great by itself! Ingredients:
1 (14 1/2 ounce) can artichoke hearts, quartered or whole (not marinated!!) |
3 eggs |
3/4 cup milk |
1 cup panko breadcrumbs |
1 cup plain breadcrumbs |
1 tablespoon garlic powder |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1/2 teaspoon cayenne pepper |
Directions:
1. Combine eggs and milk in a bowl and mix. 2. Combine breadcrumbs and seasonings in a plate or ziploc bag, however you prefer. 3. Drain artichoke hearts. Dip in egg/milk wash. 4. Coat in breadcrumbs mix. 5. Repeat egg/milk wash & then breadcrumbs. 6. Fry in hot oil either in skillet or deep fryer for 3-5 minutes. Remember they continue to brown after you take them out of the oil. These are better slightly overdone (darker brown)! |
