This is a nice recipe with potatoes, zucchini, eggplant and tomatoes all in the same dish. This comes from a co-worker who brought this to a potluck yesterday and we all went nuts over it. Enjoy Ingredients:
6 large zucchini cut in 1 cubes |
4 medium potatoes cut in similar cubes |
2 eggplants cut in cubes |
1 can stewed tomatoes |
4 cloves garlic crushed |
1 onion cut in large chunks |
2 bay-leaves |
1/2 cup olive oil |
1/4 teaspoon nutmeg |
1/4 teaspoon thyme |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Arrange all ingredients in baking pan and mix well. 2. Bake at 350 for 1 hour. 3. Add water as needed to keep it from drying out. 4. Cool before serving. |
