Ingredients:
2 pounds fava beans |
3 tablespoons butter |
2 medium shallots, minced |
2 tablespoons salt |
1 tablespoon freshly ground black pepper |
1/2 cup shredded parmesan |

Directions:
1. Bring a large pot of water to a boil over medium heat. Add the fava beans and cook until tender. Drain the beans and let cool, then peel. 2. Melt the butter in a pan over low heat and cook shallots until translucent. Add the fava beans and cook for 3 minutes. Stir in the salt, pepper and Parmesan. Transfer the beans to a serving bowl and serve. |
