I received this in an email from our local news web site courtesy of J Bucks. This is my DH favorite meal at J Bucks. I usually do not post a recipe without trying but since this recipe is suppose to be directly from the restaurant, I am posting. You make up the sauce first. The recipe does not state how much sauce this does make. The instructions are not as thorough as I would like. Once I try the recipe, I will update.
Ingredients:
2 ounces olive oil
1 1/4 cups diced onions
3 tablespoons chopped garlic
1/4 jalapeno pepper (with seeds)
1 1/2 tablespoons chili powder
1 1/2 tablespoons cumin
1 1/2 tablespoons tomato paste
3 tablespoons whole grain mustard
6 tablespoons garlic paste
1 1/4 tablespoons pureed chipotle chiles
1 1/4 cups heavy cream
3/4 cup chicken stock
salt and pepper
1/2 cup grated parmesan cheese
1 ounce vegetable oil
1 teaspoon chopped garlic
3 ounces shrimp
5 pieces andouille sausages
3 ounces roasted red and yellow peppers
8 ounces cooked pasta, linguini
1/4 ounce fresh basil
1 ounce diced tomato
freshly shredded parmesan cheese
Directions:
1. Sauce:.
2. Heat oil in a sauce pan.
3. Add onion, garlic and jalapeno and saute over medium heat until lightly brown.
4. Add the chili powder. cumin and tomato paste cook over low heat for 5 minutes.
5. Add mustard, garlic puree, chipotle puree, cream and stock and simmer for 20 minutes.
6. Add Parmesan cheese and thoroughly incorporate into the sauce.
7. Season with salt and pepper to taste.
8. Strain sauce through a strainer and store in container until use later.
9. Pasta:.
10. Pasta should be cooked and drained.
11. Heat oil in a skillet and add the garlic, shrimp and sausage.
12. Saute for 2 minutes on high heat.
13. Add cream sauce and peppers, simmer on medium heat for 4 minutes reducing the sauce by half.
14. Add pasta and basil and toss all ingredients thoroughly.
15. Place finished pasta in a bowl and garnish with tomatoes and freshly shredded Parmesan cheese.
