I got this recipe from a coworker. Her mom has been making this granola for years. It has become a staple in our house, I make a batch every two weeks. I typically eat it for breakfast, but it is good as a snack, or even warm. Ingredients:
6 cups old-fashioned oatmeal |
1 cup sunflower seeds |
1/2 cup sesame seeds |
1 cup salted peanuts |
1 1/2 cups coconut flakes |
1/2 cup ground flax seeds |
3/4 cup canola oil |
1 1/2 cups honey |
1/2 teaspoon vanilla |
cinnamon |
Directions:
1. Mix all the ingredients except the cinnamon. 2. Place on a greased cookie sheet. 3. Sprinkle with cinnamon to taste before baking. 4. Bake at 350 degrees for 30 - 40 minutes, stirring half way through. 5. Try not to over bake as the granola will get hard. 6. As soon as it is out of the oven, scrape the granola into a pile on the sheet to cool (this aids in cleanup later). 7. When almost completely cool (but not all the way cool), scrap off the sheet and store in an air tight container. |
