these are great healthy little cookies. I like them for a quick breakfast, crumbled up in my bowl with some milk and yoghurt on top. Ingredients:
1/2 cup white flour |
1/2 cup wholemeal flour |
1/2 tsp baking powder |
1/2 tsp bi-carb soda |
1/4 tsp salt |
1 tbsp butter |
1/3 cup sugar (i use half brown and half raw) |
1 tbsp golden syrup |
70g stewed plums (or apple sauce or a mashed ripe banana, whatever fruit you have, really) |
1 egg |
1 tsp vanilla |
1/2 cup rolled oats |
1 cup fine oatmeal |
1 tbsp (or more) nuts to suit, i did hazelnuts with the plums, chopped |
1/4 cup dried fruit (your choice, raisins dates, sultanas) - optional |
1 tsp spice to suit (i used cinnamon for my plum cookies) |
Directions:
1. Preheat oven to 180 C 2. Combine the flours, baking powder and soda and salt in a small bowl. 3. In a large bowl, combine the butter with the sugar. mix in the fruit (whatever you're using), add the egg and vanilla. 4. Add in the flour mixture and stir till well combined. 5. Add in the nuts and dried fruit (if you're using them) and the oats and oatmeal. (mixture may be very stiff) 6. Place tablespoon-fuls of the dough onto lined baking trays and bake for about 14 minutes. |
