Breast of Chicken with Asparagus |

Easy and elegant for the asparagus lover! Ingredients:
4 chicken breasts |
4 tablespoons butter |
8 ounces sour cream |
1 can cream of asparagus soup |
1 (3 ounce) can mushrooms, drained |
1/4 cup dry sherry |
1/2 cup parmesan cheese, freshly grated |
1 (10 ounce) can whole asparagus spears |
Directions:
1. Season chicken breasts with salt and pepper. 2. Saute chicken in butter until browned. 3. Combine the sour cream, soup, mushrooms and sherry. 4. Transfer the breasts to a baking dish and pour 1/4 of the sauce over them. 5. Sprinkle 1/2 cup cheese over the sauce. 6. Place asparagus over cheese and add remaining sauce. 7. Add the remaining cheese and bake at 350 degrees, uncovered, for about 1 hour or until chicken is tender. |
